History

Fresno's Taco Truck Throwdown, an annual contest started in 2011 by the Fresno Grizzlies minor-league baseball club, brings trucks to the ballpark where fans and a judging panel pick winners. La Vaporera has been one of its most successful recent entrants; Fresnoland credits it with wins in 2021, 2022, 2023 and 2025, though the outlet's own tally of which award it took each year is inconsistent. The truck parks near warehouses at Cherry and Central avenues, and its hours shift around catering jobs, with Tuesday daytime service the most reliable.

The specialty is tacos al vapor, in which barbacoa and tortillas are both steamed so the tortilla turns soft and absorbs the meat's juices. Al pastor and chicken are cooked on a grill for customers who prefer a seared filling.
