Birria
Birria comes from Jalisco and is made by marinating goat, mutton or beef in a paste of dried chiles, vinegar and spices and cooking it slowly until tender. The cooking liquid, skimmed and seasoned, becomes the consommé. Taquerías either serve the meat in bowls of broth with onion, cilantro and lime, or chop it into tacos; dipping the taco into the broth before each bite softens the tortilla and adds flavor. Güero is a Mexican nickname for a fair-haired or light-skinned person, and it is a common name for taquerías across the United States and Mexico.
