Tacos y Carnitas Sahuayo is a carnitas taquería on Pomona Street in Santa Ana known for weekend tacos de trompa, made from pig snout.

Overview

The shop takes its name from Sahuayo, a city in the state of Michoacán, the home region of carnitas and the origin of many of Santa Ana's taquería families. OC Weekly placed its trompa taco eighth on Gustavo Arellano's 2011 list of the ten great tacos of Orange County, and the paper's 2015 county-wide guide repeated the recommendation, noting that trompa is sold on weekends only.

Michoacán-style carnitas are cooked in a large copper or steel cazo of lard, with different cuts of the pig added in stages. Snout, or trompa, becomes soft and gelatinous with crisp edges and is chopped and served on corn tortillas with onion, cilantro and salsa.
