History

El Bajío has operated on Milpas Street since roughly the mid-1990s; a 2015 Santa Barbara Independent survey described it as about two decades old and noted that it had long been overshadowed by its famous neighbor La Super-Rica. The city's tourism bureau includes it on its Milpas Street taco trail as a family business serving traditional home-style cooking.

Tacos are generously filled and served on a single tortilla. The Independent singled out the vegetarian, lengua and chicharrón versions, along with the shop's aguas frescas and licuados. Visit Santa Barbara highlights the carnitas tacos and the tamales, which come in sweet corn and pork varieties.
