The Long Beach Post's food columnist Brian Addison reported in September 2025 that Taqueria El Chivito had officially opened in a tiny space off Long Beach Boulevard at 9th Street, on the edge of downtown. The name, "the little goat," points to its specialty.

The kitchen leans toward breakfast, with machaca and chilaquiles on the menu, and toward birria de chivo, or goat birria. Addison noted that goat is the more traditional meat for birria; beef birria became widespread in Los Angeles later, with the rise of quesabirria tacos. Goat birria is usually stewed with dried chiles and spices and served with its broth on the side. Details on the owners and exact address were not included in the report.
