Taquería Los Cocuyos is a long-running taquería in Mexico City's Centro Histórico, known for meats simmered in a bubbling communal cauldron and recognized with a Michelin Bib Gourmand.

History

Los Cocuyos has operated in the historic center since 1980, according to the Michelin Guide, and it has been a late-night reference point for decades. It was featured on Anthony Bourdain's television series No Reservations. When the Michelin Guide arrived in Mexico in 2024 it received a Bib Gourmand, which it has held in every edition since, and it appears in the guide's roundup of the best tacos in the city.

The cook at the front works over a large round pan of simmering water, fat and juices in which beef and offal cuts braise for hours, chopping each order with a cleaver. Suadero, cabeza and tripa are the signatures, and inspectors suggest ordering suadero later in the night, when it has cooked longest. Lengua, cachete and al pastor are also served. Tacos are finished with salsa and lime at the counter, and the dining area fills quickly.
