Taquizas Gilberto is a weekend-only pop-up on East Francisquito Avenue in West Covina, California, serving Hidalgo-style lamb barbacoa and goat birria.

Overview

The Infatuation reviewed the pop-up in 2022, describing a weekend operation in the San Gabriel Valley built around two slow-cooked meats in the style of Hidalgo. The word taquiza refers to a taco spread of the kind often served at Mexican parties and family gatherings.

Lamb barbacoa is sold by the pound or in tacos, and goat birria is offered alongside it. Fried specialties include taco dinamitas de birria, rolled and fried corn tortillas filled with birria, and birria tacos dorados dipped in consommé. A chile guajillo salsa accompanies the meats.

Coverage
