Like many San Diego taco trucks, Taquizas José operates from a fixed spot rather than roaming. Its lot on Cesar E. Chavez Parkway has a few outdoor tables, though many customers eat in their cars. The name comes from taquiza, the Mexican term for a taco spread served at parties, which taco trucks often cater.

The menu centers on adobada (red chile-marinated pork) served on crisped tortillas and topped with sliced avocado, with blackened peppers and radishes on the side. Grilled shrimp tacos are another staple, and the truck sells aguas frescas including jamaica, made from hibiscus.
