Davin and Jessica Waite run The Plot as a fully plant-based restaurant that aims for zero waste and regenerative practices. Davin Waite also owns Wrench & Rodent Seabasstropub. San Diego Magazine placed The Plot's signature taco on its 2025 list of the forty best tacos in San Diego County.

Carrotfish taco

The carrotfish taco is a vegan take on the Baja fried fish taco. Carrots are blanched in a seaweed dashi, which lends them a flavor of the sea, then dipped in a tempura-style beer batter and fried. They are topped with a lime-pepper slaw, a sweet and creamy sauce of the kind served at Japanese-American steakhouses, and a house-made taco sauce. The dish keeps the structure of the fish taco, a crisp battered center, a crunchy slaw and a creamy sauce, while replacing the fish entirely.
