Tito's La Especial is a Santa Ana taquería known for tacos al vapor, small steamed tacos traditionally filled with beans.

Tito's La Especial is one of the Orange County businesses specializing in tacos al vapor. OC Weekly's 2015 taco guide listed two Santa Ana locations, one on North Harbor Boulevard next to the El Fracaso bar and one on West 17th Street, and a related Tito's La Familia on North Tustin Street in Orange serving the same specialty.

Tacos al vapor

Tacos al vapor, also called tacos de canasta or sudados in parts of Mexico, are assembled ahead of time and steamed, either in a basket wrapped in cloth or in a steamer, so that the tortillas soften and absorb the fillings' fat and flavor. The guide noted that the traditional filling is beans, and common alternatives include potato, chicharrón and adobo-stewed meats. The tacos are small, cheap and usually ordered several at a time, and are associated with morning street vendors in central Mexico.
