Tortas Ahogadas Los Primos is a Santa Ana eatery specializing in the Guadalajara dishes tortas ahogadas and tacos dorados served in spicy chile sauce.

Overview

Los Primos was listed in OC Weekly's 2015 guide to Orange County tacos at the corner of Fifth Street and Hawley Avenue in Santa Ana. The guide recommended both of its namesake specialties, each drowned in a fiery chile sauce.

The torta ahogada, or drowned sandwich, is the emblematic street food of Guadalajara: a crusty birote roll filled with carnitas and submerged in a thin tomato sauce and a much hotter sauce of chile de árbol. Shops that serve it typically also sell tacos dorados, corn tortillas filled with potato, beans or meat, fried crisp and then sauced in the same way, so that the shell softens slightly at the edges. Both are commonly finished with pickled onion and eaten with a spoon or fork. In Southern California these dishes are a regional specialty rather than a staple of general taquerías, and Los Primos is one of the shops that keeps them at the center of the menu.
