Tu Mero Mole

From WikiTacos, the taco encyclopedia · Taquería

Tu Mero Mole is a regional Mexican restaurant in San Jose's Cambrian Park area, run by chef Maria Flores.

Overview

Time Out's 2021 San Jose Mexican-food guide described Tu Mero Mole as a restaurant that ranges across several Mexican regions. Chef Maria Flores cooks goat in the style of Jalisco, achiote-marinated pork from the Yucatán and mole poblano. The guide also drew attention to the salsa bar, which includes an unusual peanut salsa.

Context

Goat birria from Jalisco and cochinita pibil from the Yucatán are both commonly served as taco fillings, while mole poblano is the best-known of the moles of Puebla. Restaurants that bring several of these traditions under one roof are a feature of the South Bay's Mexican dining scene. The restaurant's name is a playful Spanish phrase built around mole. Sources consulted do not give an address or founding date.
