Wahoo's Fish Taco is a restaurant chain founded in 1988 in Costa Mesa by brothers Ed Lee, Mingo Lee and Wing Lam, serving grilled fish tacos with Brazilian and Asian influences to a surf-culture clientele.
History
The founders are brothers of Chinese-Brazilian heritage who based their menu on the Baja-style fish tacos they had eaten in Mexico. They opened the first Wahoo's in November 1988 on Placentia Avenue in Costa Mesa, grilling the fish rather than frying it. The chain marketed heavily to the surfing community and expanded through Orange County to Los Angeles County, Colorado and other states. By its 25th anniversary in 2013 it had 64 restaurants in seven states and had opened its first international location, in Tokyo.
Menu
The signature taco uses grilled wahoo, a fast-swimming Pacific game fish also known as ono, or mahi-mahi, grilled and served in a tortilla. The menu blends Mexican formats with Asian and Brazilian influences and offers vegetarian and vegan options built on tofu, brown rice and black beans.
