Alexis Ayala
Alexis Ayala is a Mexico City chef and taquero who runs Tacos Los Alexis and the neighboring restaurant Pargot in Roma Norte.
Career
Ayala runs Tacos Los Alexis on Calle Chiapas in Roma Norte, next to his restaurant Pargot, which shares a similar layout. The taquería has a short menu of tacos, volcanes and costras; its best-known item is a vegetarian taco of huitlacoche on yellow masa wrapped in crisped cheese.
Los Alexis received a Bib Gourmand in the first Michelin Guide Mexico in 2024 and has kept it in the 2025 and 2026 editions, while Pargot is also listed in the guide. In a 2024 interview with Texas Monthly, Ayala said business at the taquería rose by about 30 to 40 percent after the guide came out and that it began drawing older diners from across the city.
