Overview
Chef Alexis Ayala runs Los Alexis alongside Pargot, his neighboring restaurant, which has a similar layout. The taquería has a compact, well-designed prep area and a few tables under a covered sidewalk. It received a Bib Gourmand in the first Michelin Guide Mexico in 2024 and has kept it since. Ayala told Texas Monthly that business rose by roughly 30 to 40 percent after the first guide was published.
Menu
The menu is short and centers on tacos, volcanes and costras, the last being tacos wrapped in a layer of griddled cheese. The best-known item is a vegetarian taco of huitlacoche on a yellow masa tortilla wrapped in crisped cheese, which Michelin inspectors singled out as the standout dish.
