Asadero is a Hermosillo-style taco stand at Melrose Avenue and Vine Street in Hollywood, Los Angeles, specializing in mesquite-grilled ribeye.

Overview

The stand sets up in a supermarket parking lot at Melrose and Vine. Its chef previously worked in restaurant kitchens in Los Angeles and Las Vegas and turned to asada after being inspired by the beef-focused taquerías of Sonora, according to The Infatuation. Popular items often sell out and lines can be long.

The signature is gaonera, thinly cut ribeye grilled over mesquite. Other meats include chopped arrachera (flank steak), suadero, carnitas, chorizo, chicken and an al pastor marinated with tepache. The cachetada combines arrachera, melted cheese and beef chicharrón, and a chile relleno with quesillo is also offered. Customers choose blue corn or Sonoran flour tortillas, with salsas that include salsa macha.
