Cantina Mayahuel is a cantina in San Diego's North Park neighborhood, recommended by local chefs for its carnitas tacos with chopped serrano chiles.

Overview

Mayahuel is the Aztec goddess of the maguey plant, the agave from which pulque, mezcal and tequila are made, an apt namesake for a cantina. San Diego Magazine's 2025 survey of local chefs' favorite tacos included it on the recommendation of Ryan Thorsen, chef at Mister A's, who singled out its carnitas tacos finished with chopped serranos.

Carnitas, pork cooked slowly in lard until tender and then browned until crisp at the edges, is the signature dish of Michoacán. Topping it with fresh chopped serrano chiles, rather than a cooked salsa, adds sharp, grassy heat to the rich meat.
