Chando's Tacos is a Sacramento-based taquería chain and taco-truck operation founded by Lisandro "Chando" Madrigal, known for Tijuana-style adobada and grilled fish tacos.

History

Lisandro Madrigal built Chando's into a group of several taquerías plus a small fleet of trucks around Sacramento. The Sacramento News & Review credited it with a strong following and noted that he later opened a table-service restaurant, Chando's Cantina, on 15th Street in downtown Sacramento. The Citrus Heights Sentinel reported in 2023 that the Cantina had closed in August of that year and that the Citrus Heights store at Sylvan Corners would close in September, with Madrigal citing the economy and heavier competition; a Fair Oaks location on Sunrise Boulevard remained, and a new Chando's opened in Atlanta the same year.

In FiveThirtyEight's 2014 nationwide burrito bracket, Chando's advanced out of a group that also included San Francisco's El Farolito.

The menu centers on Tijuana-style adobada, grilled fish tacos and mulitas, alongside tortas. SACtoday counts about ten taco fillings, among them birria, chorizo, carnitas, asada, fish and a vegetable option, served with house salsas and stone-ground tortillas; the company also sells take-home taco kits.
