El Rey de las Carnitas is a carnitas business in Quiroga, Michoacán, a town known for its corridor of carnitas stalls near the main plaza.
Overview
Quiroga, on the shore region of Lake Pátzcuaro and known as the capital of the Tarascos, is one of the Michoacán towns most closely associated with carnitas, pork slowly cooked in its own lard in large copper pots. Around its main plaza a corridor of food stalls sells carnitas tacos throughout the day.
El Financiero named El Rey de las Carnitas among the town's places to eat. Besides traditional carnitas, the business serves what it calls carnitas infierno, named for their fiery flavor, along with pork ribs and fresh corn tamales. As elsewhere in Michoacán, carnitas are usually sold by weight or in tacos, with buyers choosing among cuts such as maciza (lean meat), cuerito (skin) and buche (stomach).
Context
Quiroga is one of several Michoacán towns on a carnitas circuit that also includes Tacámbaro, which has held a carnitas festival since 2013, and Santa Clara del Cobre.
