Tacos de buche
Tacos de buche are tacos of pork stomach that has been cleaned and slowly cooked until soft and chewy, sold above all at carnitas stands.
Name and definition
In everyday Spanish buche suggests the throat or the mouth, since "hacer buches" means to swish liquid in the mouth. Chilango and N+ both point out that this is misleading: at the taco stand the word means the pig's stomach. El Financiero, drawing on the Diccionario enciclopédico de la gastronomía mexicana, also lists buche as the stomach and says it is mainly prepared as part of carnitas. Chilango adds that pork buche is by far the most popular version.
Some writers disagree on the anatomy. A 2025 Excélsior guide to carnitas describes buche as the pig's esophagus with a gelatinous texture, which conflicts with the stomach definition given by the other sources.
Preparation
Because the stomach has a strong natural smell, cooks clean it carefully before cooking. Tasting Table, summarizing Serious Eats, describes rinsing the raw stomach with white vinegar, parboiling it, chopping it and then simmering it for hours until tender. At carnitas stands the buche goes into the same copper cazo of lard as the other cuts and comes out soft, slightly gelatinous and chewy. It is then chopped on the block and served on a doubled corn tortilla.
Buche picks up the flavor of whatever it is cooked in, which is why Tasting Table notes that it pairs well with acidic or pickled garnishes that cut its richness.
At the carnitas stand
Buche is one of the standard choices on a carnitas menu alongside maciza, cuerito, nana and costilla. Mexico City's Rincón Tarasco, founded by a cook trained in Zacapu, Michoacán, lists buche among its cuts, and the stand El Cuñado in Tlalpan is known for surtido tacos that mix buche, nana and maciza with a spicy avocado salsa verde. A taco that combines buche with nana is called nenepil.
Pigs reached the Americas with the Spanish, and Tasting Table frames buche as part of the Mexican habit of using the whole animal so nothing goes to waste.
Recipe
Ingredients
- 1 kg pork stomach (buche)
- 1/2 cup white vinegar
- 1 white onion, halved
- 4 garlic cloves
- 2 bay leaves
- 1 tablespoon salt
- 500 g pork lard
- 1/2 orange
- 16 to 32 corn tortillas
- Chopped onion and cilantro, limes, salsa verde
Steps
- Rinse the buche well, scrape off any fat or residue, then rub with the vinegar and rinse again.
- Cover with water in a pot, bring to a boil for 5 minutes, drain and rinse.
- Return to the pot with fresh water, the onion, garlic, bay leaves and salt. Simmer gently until a knife slides in easily, 2 to 2 1/2 hours. Drain and dry well.
- Melt the lard in a heavy pot over medium heat, add the buche and the orange half and cook, turning occasionally, for 25 to 30 minutes until lightly golden at the edges.
- Drain, chop into small pieces and season with salt.
- Serve on warm doubled tortillas with onion, cilantro, lime and salsa verde.
The strained lard can be reused for frying other carnitas cuts.
