Felipe Núñez is the founder of Tacos El Yaqui in Rosarito, Baja California, the shop that popularized the perrón taco.

Biography

Núñez was born in Zacatecas and moved to Tijuana in 1967 at age 16. He worked at Carnitas La Flor de Michoacán and then as a kitchen helper at Restaurant El Nido before opening his own stand, El Yaqui, in Rosarito on 3 February 1984. The first stand was a small wooden structure with a wobbly grill, away from the main boulevard, but it became one of the region's best-known taco shops. Its signature perrón, a flour tortilla loaded with marinated beef, cheese, beans, onion, cilantro, salsa and blistered peppers, took its name from a satisfied customer's slang praise.
