Tacos El Yaqui
Tacos El Yaqui is a taco shop in Rosarito, Baja California, opened in 1984 by Felipe Núñez and famous for the perrón, a loaded carne asada taco on a flour tortilla.
History
Felipe Núñez, a native of Zacatecas, arrived in Tijuana in 1967 at age 16 and worked at Carnitas La Flor de Michoacán and as a kitchen helper at Restaurant El Nido before opening El Yaqui on 3 February 1984. The first stand was a modest wooden structure with an unsteady grill, set back from Rosarito's main boulevard. It grew into one of the best-known taco shops in Baja California, visited by athletes, politicians, musicians and chefs including Rick Bayless, Pati Jinich and Aarón Sánchez, and covered by Vogue, the San Diego Union-Tribune and Travel + Leisure.
The perrón
The house taco layers marinated beef, cheese, pinto beans, onion, cilantro, the house salsa and blistered peppers on a flour tortilla. According to the shop, the name came from a customer who ordered a taco with everything and declared it "bien perrón," slang for excellent. Trendencias also lists asada and caramelo tacos and noted the shop's rise in TasteAtlas rankings.
