Fish Guts was opened by Pablo Becker, a San Diego native and a cousin of the restaurateur and chef Richard Sandoval. The shop works with sustainable local fish, a focus that ties it to San Diego's commercial fishing community rather than the frozen whitefish common in fast-food fish tacos. San Diego Magazine placed it on its 2025 list of the forty best tacos in the county.

The signature taco uses blackened swordfish belly, a fatty cut that takes well to a hard sear, topped with jalapeño slaw and a spicy aioli. Becker also appears in the same magazine feature as a guest critic, naming the suadero taco at Taqueria by El Prieto in Chula Vista as one of his favorites, an indication of the broader taco culture of the South Bay he draws on.
