Guillermo Matías de Hilario, nicknamed La Mamba Negra, is the grill cook at Tacos El Chupacabras in Coyoacán, Mexico City.

Career

Matías de Hilario had worked the grill at Tacos El Chupacabras for 15 years when Chilango profiled the stand in 2017. He is responsible for its signature chupacabras taco, a mix of bistec, cecina and chorizo finished with a secret seasoning that he says combines 127 spices. Under his watch the stand, which began around 1994 outside the Coyoacán Metro station, became a lunchtime magnet beneath the Río Churubusco overpass for office workers, artists, neighbors and tourists.
