Tacos in Mexico City
Mexico City, the federal capital, is the country's densest taco market and the birthplace of tacos al pastor and suadero; its streets also host basket-carried tacos de canasta, tacos de guisado, beef-head and tripe stands, and in 2024 the first taquería to receive a Michelin star.
Overview
Mexico City is not a state but the federal capital, and Mexico News Daily calls it the country's culinary capital. Industrialization in the twentieth century drew migrants, including many women working in light industry, who brought regional dishes with them; historian Jeffrey Pilcher, interviewed by Smithsonian magazine, argues that this mixing produced the popular cuisine now thought of as Mexican, and that taquerías first appeared in the city's working-class neighborhoods. In 2024 Uber Eats reported that the capital placed more taco orders than any other entity, and a 2019 economic census cited by Tus Buenas Noticias counted more than 10,000 taco businesses in the city.
Al pastor and suadero
Tacos al pastor descend from the shawarma brought by Lebanese immigrants, who settled mostly in Puebla and Mexico City in the late nineteenth and early twentieth centuries. Around the late 1950s or early 1960s, cooks replaced lamb with marinated pork on the vertical spit. Mexico News Daily notes that El Huequito, opened in 1959 in the Centro, is often cited as the originator, while El Tizoncito in Condesa credits its founder with inventing the taco in 1966 and local lore credits it with adding pineapple. Small corn tortillas, onion and cilantro are the standard finish.
Suadero, a thin beef cut from between the ribs and skin cooked slowly in fat, is so closely identified with the city that Chilango calls its tacos one hundred percent chilango, though no individual inventor is known.
Basket and stew tacos
Tacos de canasta, also called tacos sudados, are filled in advance, layered in a cloth-lined basket and carried through the streets, often on bicycles, for a quick midday meal. México Desconocido lists fillings such as potato, beans, chicharrón in red salsa, adobo and green pipián. The Michelin Guide profiled Los Especiales near the Zócalo, a rare brick-and-mortar seller that offers four fillings and sells about 2,000 tacos a day. Tacos de guisado, served on rice with stews of the day, are a workday staple; El Universal traces them to the acorazados of Morelos.
Michelin era
When the Michelin Guide launched in Mexico on May 14, 2024, Taquería El Califa de León in San Rafael, known for the gaonera, a thin steak on a small corn tortilla, became the only taquería in the city with a star. Texas Monthly reported lines of hours and a 30 to 40 percent increase in business at Tacos Los Alexis, one of several taquerías awarded a Bib Gourmand along with El Jarocho, Los Cocuyos and Tacos Charly. In the 2026 edition El Califa de León lost its star, and the arrachera taquería La Once Mil in Lomas de Chapultepec received a star.
