El Remolkito del Sirloin

From WikiTacos, the taco encyclopedia · Taquería

El Remolkito del Sirloin is a taquería on the Periférico in the El Pedregal area of southern Mexico City that cooks beef sirloin on a vertical spit.

Overview

The Infatuation lists El Remolkito del Sirloin among the best taco spots in Mexico City, placing it on Anillo Periférico in colonia Olímpica, Coyoacán, near El Pedregal. Its distinguishing feature is sirloin roasted on a trompo, the vertical spit more often associated with marinated pork al pastor.

The house taco is the Gaonera Remolkito, named after the gaonera, a thin-cut steak taco popular in the capital. The menu also offers a costra, in which a crust of griddled manchego cheese takes the place of the tortilla.

Context

Sirloin on the trompo is one of several newer variations on Mexico City's spit-roasting tradition, which began with pork al pastor. Mexico City has thousands of taquerías, from sidewalk stands to sit-down restaurants, and food media such as Chilango, Time Out México and The Infatuation regularly compile guides to the ones locals return to.
