Los Provolones is a weekday charcoal-grill taco stand on Rosales street near the Tabacalera and Doctores area of Mexico City, known for melted provolone.
Overview
Chilango's list of thirty taquerías places Los Provolones opposite Rosales 21, near Niños Héroes and Río de la Loza, on the edge of the Tabacalera neighborhood. Meats are grilled over charcoal and finished with provolone cheese: Argentine chorizo, chistorra, pork belly (panceta, the most requested), cecina and German sausage. It serves weekdays from breakfast to early evening and takes cash only.
Chilango's 2023 survey of Centro-area taquerías also listed Los Provolones on Rosales in Tabacalera, with arrachera with cheese as a recommended order.
Context
The area between the Centro, Tabacalera and Doctores has many street stands serving government and office workers.
