Overview

Chilango lists Tripolandia at Plaza Juan José Baz 5, the small plaza in the eastern Centro Histórico, and dates it to 1955. The specialty is tripa: the intestine is first boiled, then crisped on a second comal, and customers can ask for it soft or very crisp. It opens Monday through Saturday from late morning until late afternoon.

Context

Chilango included it in a list of thirty taquerías every Mexico City resident should know, a selection weighted toward neighborhood places outside the usual tourist circuit. Tripe tacos have a devoted following in the capital, where the degree of crispness (doradita or suave) is part of the order.
