Siembra Tortillería
Siembra Tortillería is a modern taquería in Polanco, Mexico City, opened in 2019 by chefs Karina Mejía and Israel Montero and known for tacos on heirloom-corn tortillas.
History
Chefs Karina Mejía and Israel Montero opened the taquería in 2019, a few doors from their sit-down restaurant, Siembra Comedor. It has carried a Michelin Bib Gourmand since the first Mexican edition of the guide in 2024. A manager told Texas Monthly that the award brought noticeably larger crowds.
Menu
Tortillas are made from heirloom corn, and the menu covers a broad range of fillings. Michelin inspectors highlighted a well-charred fish al pastor and arrachera served steak-frites style under crisp shoestring potatoes. Other items noted by visitors include a gaona of beef filet and cecina with green chorizo. Tacos are generous and come out quickly.
