Karina Mejía is a Mexico City chef who co-founded Siembra Tortillería, a Polanco taquería known for heirloom-corn tortillas, with Israel Montero in 2019.

Career
Mejía and fellow chef Israel Montero opened Siembra Tortillería in Polanco in 2019, a few doors from their sit-down restaurant, Siembra Comedor. The taquería serves tacos on heirloom-corn tortillas, with dishes such as fish al pastor and arrachera topped with shoestring potatoes. It has held a Michelin Bib Gourmand since the guide's first Mexican edition in 2024.
