Montero opened Siembra Tortillería with chef Karina Mejía in 2019 on Avenida Isaac Newton in Polanco, near the pair's restaurant Siembra Comedor. The taquería is known for generous tacos on heirloom-corn tortillas, including a well-charred fish al pastor, and has carried a Michelin Bib Gourmand since 2024.
