Tacos in Jalisco
Jalisco, the western state whose capital is Guadalajara, is the homeland of birria, the chile-marinated goat or beef stew eaten in tacos with its broth, and also gives Mexico tacos de cabeza from the Altos region, the train-station tacos of Tuxpan and a lively street-taco scene in Guadalajara and Puerto Vallarta.
Birria
Larousse's gastronomic dictionary calls Jalisco the land of tequila, pozole and birria, and describes birria as one of the state's most representative dishes. The meat, traditionally goat or lamb though beef, pork and other meats are also used, is salted, coated in a chile sauce, rested and then cooked slowly, classically wrapped in maguey leaves in a sealed pot, until it falls from the bone. The cooking juices are combined with roasted tomato to make the broth. Birria can be served in a bowl with onion and oregano or eaten in corn tacos.
The town of Cocula is commonly named as birria's birthplace. Azteca Jalisco reports the claim of a sixteenth-century origin there as hearsay, and a 2026 travel piece citing Guadalajara writer Rafael Aguayo links the dish to goats introduced by the Spanish that multiplied into a pest. In Guadalajara, birria tapatía is often made with beef.
Other Jalisco tacos
Larousse lists tacos de asada, tacos de nata, flautas and tostadas among the state's street foods, alongside the torta ahogada. The Altos de Jalisco town of Santiaguito de Velázquez claims to be the cradle of the taco de cabeza: Food & Pleasure recounts the local story that José Villalobos popularized steamed beef-head tacos in Mexico City in the 1930s, selling them for five centavos, and notes that many villagers still work as taqueros in Mexico and abroad.
In the southern town of Tuxpan, tacos de la estación were sold to train passengers; a local directory describes them as handmade corn tortillas dipped in red salsa and filled with pork and beans, served with grilled chiles and onion.
Guadalajara and Puerto Vallarta
The second edition of the Michelin Guide Mexico, published in 2026, gave a Bib Gourmand to Tacos y Gorditas Elvira, a lunch counter inside Guadalajara's Mercado Alcalde known for chicharrón and rib fillings, and listed the goat birria specialists Birriería David and Birriería Las 9 Esquinas. In Puerto Vallarta, Pancho's Takos, a cash-only al pastor taquería in the Zona Romántica, was also listed. Time Out México points readers in Mexico City to Jalisco-style birria tacos served with broth for dipping.
