Tacos Paco is a Guadalajara barbacoa business that grew from a single stand in Jardines del Sur into one of the city's larger taquería groups.
Overview
Tacos Paco's original location is at Avenida Isla Gomera and Isla Deseada in Colonia Jardines del Sur, on the south side of Guadalajara. Carlos Serna of El Diario de un Tragón, who lived across from the first stand, wrote in 2024 that he watched it grow from a small puesto into one of the largest taquería groups in the city.

Menu
The business is known for barbacoa made from a traditional recipe. In Guadalajara the style means shredded meat braised with chiles and tomatoes, served on two corn tortillas crisped on the comal, usually for breakfast.
