Puesto
Puesto is a San Diego-based Mexican restaurant group founded by the Adler and Lombrozo families, known for blue corn tortillas pressed to order and a filet mignon taco with crisp cheese.
History
Puesto was built by two sets of brothers and cousins, the Adlers and the Lombrozos, with Eric Adler as a co-founder. San Diego Magazine credits the original concept to Luisteen González, a Mexico City-born hairdresser who became a taco caterer. The company opened its seventh restaurant, a brewery called Puesto Cervecería in the former Gordon Biersch building in Mission Valley, in 2020. It has since expanded to locations at The Headquarters downtown and in La Jolla, to Anaheim and Irvine in Orange County, to Santa Clara and Concord in the Bay Area, and to Nashville. Executive chef Raul Casillas previously cooked at Valle in Oceanside.

Every tortilla is blue corn, made from organic non-GMO masa sourced through Masienda and hand-pressed to order. The signature filet mignon taco tops medium-rare steak with griddled cheese, avocado and a pistachio-serrano salsa. Puesto won the readers' pick for best taco in San Diego Magazine's 2019 awards.
