Valle is a Michelin-starred Mexican restaurant in Oceanside, in northern San Diego County, led by chef Roberto Alcocer, whose wagyu quesataco earned a place on San Diego Magazine's 2025 list of the county's best tacos.

Overview

Valle is a fine-dining restaurant rather than a taquería, led by chef Roberto Alcocer. San Diego Magazine described it in 2025 as Michelin-starred and recommended pairing its quesataco of grilled wagyu beef with mezcal. Alcocer is also a figure in the region's casual taco culture: in the same feature he named the made-to-order tortillas, birria and carne asada at Craft Coast Brewery & Taco Stand among his own favorite tacos, and Raul Casillas, executive chef of the Puesto chain, previously cooked at Valle.

Quesataco

A quesataco is a taco in which cheese is griddled directly on the plancha until it melts into the tortilla and forms a crisp, lacy crust, a technique popular in Tijuana and along the border. Using wagyu, a heavily marbled Japanese-breed beef, turns the street-food format into a luxury dish.
