Guadalajara, the capital of Jalisco, is a birria city, where goat or beef stewed in chile adobo is eaten in tacos with its broth, and it also has a busy market and street taco culture that the Michelin Guide began to recognize in 2026.

Birria

Birria is the dish most associated with Guadalajara and with Jalisco as a whole. Larousse's gastronomic dictionary describes meat, traditionally goat or lamb, rubbed with chile sauce, rested and then slow-cooked, classically wrapped in maguey leaves in a sealed pot, until it falls from the bone; the cooking juices become a tomato-tinged broth. It can be served in a bowl with onion and oregano or in corn tacos. A 2026 travel piece from Guadalajara describes the goat rubbed with chile adobo and braised with vinegar, garlic, cumin, bay leaf and thyme, with cloves, cinnamon, guajillo and ancho, and notes that birria tapatía is made with beef instead of goat. The same piece repeats the claim, attributed to Guadalajara writer Rafael Aguayo, that birria is native to the nearby town of Cocula; Azteca Jalisco presents that origin as tradition rather than established fact.

Birrierías

Birriería Las 9 Esquinas, on calle Colón in the city center, is a longstanding restaurant decorated with tile and pottery that specializes in goat birria, served as a full or small order or as three tacos on corn tortillas made to order, with onion, lime and several salsas. It and Birriería David were listed in the 2026 Michelin Guide Mexico. Time Out México directs readers in Mexico City to Jalisco-style birria tacos served with broth for dipping.

Market and street tacos

Tacos y Gorditas Elvira, a lunch counter inside the Mercado Alcalde, received a Bib Gourmand in 2026. Customers take a numbered ticket and wait while staff make tortillas and gorditas; the Michelin inspectors singled out the chicharrón and costilla, and noted that items sell out later in the day and that only cash is accepted. Larousse lists tacos de asada, tacos de nata, flautas and tostadas among Jalisco's street foods, along with the torta ahogada.

Guadalajara's newer restaurants also experiment with tacos. A 2026 visitor's account describes huitlacoche tacos, quelite and avocado tacos on blue corn tortillas at PalReal, which received a Bib Gourmand, and fried tuna and shrimp tacos at the seafood restaurant Anita Li.

Taqueros from the Altos

The Altos de Jalisco region east of the city supplies taqueros to the rest of the country. Food & Pleasure reports that the town of Santiaguito de Velázquez considers itself the cradle of the beef-head taco, which local tradition says José Villalobos popularized in Mexico City in the 1930s.
