Birriería El Paisano is a goat birria restaurant in central Guadalajara, founded in 1930, across the square from Birriería Las 9 Esquinas.

Overview

El Paisano is at Calle Leandro Valle 889 in the Centro, in the Nueve Esquinas area, a few blocks south of the historic center. The district has several old birrierías, and El Paisano sits across the plaza from Birriería Las 9 Esquinas. Will Fly for Food gives 1930 as its founding year. Like its neighbor, it was featured on the Netflix series Taco Chronicles.

At the time of Will Fly for Food's visit in early 2022 it opened 9 a.m. to 5 p.m. and closed on Tuesdays. Wayward Blog found it sold out on one visit.

The birria is made with goat and served as a stew with tortillas, as tacos de birria, or in combinations that pair a small birria with a quesadilla and a drink.

Jalisco birria is traditionally goat braised in a broth seasoned with vinegar, garlic, cumin, bay leaf and thyme, and the dish is closely associated with Cocula, Jalisco.
