Taco Chronicles (Las crónicas del taco) is a Spanish-language Netflix documentary series created by Pablo Cruz in which each episode is devoted to a single style of taco and narrated in the first person by the taco itself; it ran for three volumes between 2019 and 2022.

Format

Instead of a host or celebrity chef, each episode gives voice to a taco, played by an offscreen actor, which tells its own history while the camera visits the taqueros, butchers, cooks and historians behind it. Creator Pablo Cruz, a Mexican producer whose earlier credits include the film Miss Bala and the series Luis Miguel, told KQED that the idea was to give every taco a personality. The L.A. TACO editor Javier Cabral served as associate producer and taco scout, spending about a year locating the taquerías that appear on screen.

Volume 1 (2019)

The first season premiered on July 12, 2019, with six half-hour episodes: pastor, carnitas, canasta, asada, barbacoa and guisado. Chilango credits direction to Carlos Pérez Osorio and photography to Carlos Correa, with scripts by Gibrán Portela, Arcadi Palermi and Pablo Duarte drawing on texts by writers including Cristina Rivera Garza, Laia Jufresa and Antonio Ortuño. The carnitas episode visits Quiroga, Michoacán, and the asada episode follows the meat from northern Mexico to Los Angeles. Chilango praised the cinematography but found some of the taco voices forced and observed that few women experts appear.

Volume 2 (2020)

The second season, released in September 2020, covered suadero, cochinita pibil, cabrito, birria and fish tacos, plus episodes on the burrito and on the American crunchy taco. L.A. TACO reported that it ranged over 18 regions in Mexico, the United States and Japan, with Hallie Davison as producer and Santiago Fábregas directing.

Volume 3: Cross the Border (2022)

The third season, subtitled Cross the Border, premiered on November 23, 2022, and moved the series to the United States, with eight episodes set in Chicago, Las Vegas, New York, San Antonio, Los Angeles, Dallas, Phoenix and San Diego. InsideHook reported that Davison directed the Texas episodes, which included Revolver Taco Lounge in Dallas and El Pastor Es Mi Señor in San Antonio, and ABC15 listed Taco Boy's, Tacos Chiwas, Bacanora and Fry Bread House among the Phoenix-area restaurants featured.
