Tacos Carlos is a taquería in the Del Fresno neighborhood of Guadalajara specializing in finely chopped, crisp suadero.

Overview

Tacos Carlos is at Calle Fresno 1968 in Colonia Del Fresno, a residential district southwest of central Guadalajara. México Desconocido included it in its 2026 list of the city's essential taquerías.

The house specialty is suadero, a thin beef cut from between the belly and leg that is usually slow-cooked in fat on a curved griddle. At Tacos Carlos it is chopped finely and crisped before going into the tortilla, then served with an uncooked red salsa.

Suadero is most associated with Mexico City street stands, so a shop built around it is a departure from Guadalajara's better-known barbacoa, birria and lengua specialists. The crisp finish echoes the city's fondness for tacos dorados.
