Tripitas Don Ramón is at Calle Chiapas 1538 in San Miguel de Mezquitán, an older neighborhood north of the Guadalajara city center. México Desconocido describes it as a landmark of the area since 1970.

The business is devoted to tripa, beef or pork small intestine cleaned, cooked and then finished on the griddle. Customers choose it soft or crisp, and it can be ordered as a portion of meat with tortillas on the side or already folded into tacos. The house red salsa is singled out as its signature.

In Guadalajara, tripa dorada also appears on the menus of all-night taquerías such as Taquería Minerva.

México Desconocido included it in a May 2026 list of twelve essential Guadalajara taquerías, alongside Santa Tere's Tacos Juan and Tacos El Pirata.
