Tacos El Pirata is a Santa Teresita taquería in Guadalajara known for steamed head-meat tacos such as eye, tongue and lip.

Overview

Tacos El Pirata is on Calle Garibaldi 1400 in Santa Teresita, the Guadalajara barrio known locally as Santa Tere. México Desconocido calls it a legend of the neighborhood, which is also home to the Mercado Santa Tere and several well-known birria and barbacoa stands.

The stand works with steamed beef head cuts. Ojo (eye), lengua (tongue) and labio (lip) are the cuts named in México Desconocido's 2026 guide, served in tacos al vapor that keep the meat soft. Alongside them it sells crisp fried taquitos that the house calls taquitos de ilusión.

Steaming is the standard method for tacos de cabeza in much of Mexico: the head meat is cooked slowly over steam and then chopped to order, so each part of the head has its own texture. Ojo and labio are among the richer, more gelatinous cuts, while lengua is firmer.
