Overview

Taquería Minerva is at Avenida Ignacio L. Vallarta 2982, on the stretch of Avenida Vallarta near the Minerva monument. Gastrolab reported in 2021 that it had 58 years of history and stayed open 24 hours a day.

The menu is broad. It covers pastor, cabeza, bistec and tripa dorada (crisp-fried tripe), plus gringas, quesadillas, tacos al vapor and hot dogs.

The menu combines spit-roasted pastor, griddled tripa and steamed tacos, so the taquería covers dishes that other Guadalajara stands sell only in the morning or only at night.

Gastrolab placed it last in its 2021 taco route, after a steamed-taco stand, the birrierías of Santa Teresita and Las Nueve Esquinas, and several barbacoa and pastor taquerías. Its round-the-clock hours set it apart from the other stops on that route, most of which serve only in the morning or only at night.
