El Gallo is a barbacoa street stand in Colonia Independencia, Guadalajara, one block from the Estadio Jalisco.

Overview

El Gallo's main stand is at Monte Líbano and Siete Colinas in Colonia Independencia, one block from the Estadio Jalisco football stadium. A second location is on Avenida Filósofos y Científicos in Colonia Colinas de la Normal. It is a traditional street stand with large crowds; customers eat standing at the counter or take their tacos to go.

El Diario de un Tragón's 2024 survey of Guadalajara barbacoa praises the stand's tacos dorados, its grilled onion and its salsa. Barbacoa in Guadalajara is shredded meat braised with chiles and tomatoes, served in two corn tortillas that are crisped on the comal, and garnished with raw and fried onion, cilantro, lime and salsa. It is usually eaten at breakfast.

Carlos Serna of El Diario de un Tragón included it in a 2024 list of seven barbacoa taquerías that also features Tacos Juan and Tacos Paco.
