Tacos Charlie is a Guadalajara taquería known for Jalisco-style tacos de barbacoa, usually ordered bañados in sauce.

Overview

The Tequila Files named Tacos Charlie as one of the best places in Guadalajara for tacos de barbacoa, a breakfast specialty of the city that differs sharply from the pit-roasted lamb barbacoa of central Mexico. In Guadalajara, barbacoa is beef braised with chiles and tomatoes, shredded, tucked into corn tortillas and then crisped on a comal. Most customers at Tacos Charlie order their tacos bañados, drenched in sauce.

Azteca Jalisco notes that barbacoa in Guadalajara is commonly beef or lamb, served with warm tortillas, onion and cilantro, and is milder and juicier than the city's other signature stew, birria, which is built on goat and a heavier spice paste.
