El Profe Jiménez is a Santa Tere street stand in Guadalajara, founded in 1982 by schoolteacher Miguel Covarrubias Jiménez, that sells tortas ahogadas alongside carnitas and crisp tacos.

History

The stand was started in 1982 by Miguel Covarrubias Jiménez, a teacher trained at a normal school who also worked as a sports commentator and coach. He began selling tortas ahogadas while still teaching, and the business took its name from his profession. His children grew up helping at the stand and took it over after his death; El Financiero quotes his son Alejandro Jiménez. Two menu items, the borrador and the pizarrón (eraser and blackboard), are named in tribute to the classroom.

The torta ahogada, a crusty roll filled with meat and drowned in sauce, uses two sauces: a cold, spicy one and a hot one for flavor. Fillings include costilla, chicharrón, carnitas, buche, cachete and pancita. The stand also sells tacos de carnitas and tacos dorados, plain or with meat, along with carnitas by the order and tostadas. Culinary Backstreets highlights its tacos destrozados. Everything is made in-house.

The stand is at Calle Andrés Terán 841 in Villaseñor, close to Santa Teresita, and opens daily from 8 a.m. to 3 p.m. except Tuesdays.
