Miguel Covarrubias Jiménez was a Guadalajara schoolteacher who in 1982 founded Tortas Ahogadas El Profe Jiménez, a street stand selling tortas ahogadas, carnitas and tacos.

Biography

Covarrubias Jiménez trained as a teacher at a normal school. He also worked as a sports commentator, an analyst of local teams and a coach. While still teaching, he began selling tortas ahogadas from a stand in the Villaseñor neighborhood near Santa Teresita, and customers came to call the business after his profession: El Profe Jiménez, the teacher Jiménez. El Financiero dates the start of the stand to 1982.

His children grew up working at the stand and took it over after his death. His son Alejandro Jiménez says everything is still made in-house. The menu keeps nods to the classroom, such as the borrador and pizarrón (eraser and blackboard), and alongside the tortas it sells tacos de carnitas and tacos dorados. Culinary Backstreets has written about the stand's tacos destrozados and says it has been serving for more than four decades.
