Birriería El Chololo
Birriería El Chololo is a birria restaurant in Tlaquepaque, in the Guadalajara metropolitan area, long run by Javier Torres Ruiz and often counted among the best birrierías in Jalisco.
History
El Chololo was the nickname of Javier Torres Ruiz, who ran two restaurants under that name. The older one is in Tlaquepaque, a working-class municipality of the Guadalajara area. The family's birria recipe is said to date back about a century and is closely guarded. Torres died of a heart attack in February 2016 at age 74, and both restaurants closed for three days of mourning. Jalisco's governor and Guadalajara's mayor sent public condolences, a sign of his standing; he had served several terms as a municipal councilor and was known for helping regular customers and local merchants. His niece and nephew, María Josefina and Hugo Israel Caminos Torres, were involved in the business.

The house dish is birria, a stew of goat or mutton seasoned with dried chiles and spices, served with its consomé, beans topped with cheese and handmade corn tortillas for making tacos at the table.
