Javier Torres Ruiz
Javier Torres Ruiz, known as El Chololo, was a Jalisco birriero whose Tlaquepaque restaurant Birriería El Chololo is often counted among the best in the state.
Biography
Torres ran two birrierías under his nickname, the older in Tlaquepaque, using a family recipe said to be about a hundred years old. Beyond the kitchen, he served two or three terms as a municipal councilor, worked with local merchants through a labor union and was known for paying funeral costs for relatives of regular customers. He died of a heart attack in February 2016 at age 74; both restaurants closed for three days, and Jalisco's governor and Guadalajara's mayor publicly offered condolences. Food writers called him the godfather of birria.
