Tacos in Durango
Durango, in Mexico's northern highlands, has a ranch cuisine of dried meat, chile pasado and flour and corn tortillas; its taco culture centers on weekend carne asada, gorditas, tripe tacos in the capital and the discada it shares with the Comarca Lagunera.
A cuisine of dried foods
Larousse's gastronomic dictionary explains that Durango's harsh climate and single annual harvest led its people to preserve food. Chiles pasados, carne seca, chorizo, pinole and other dried foods are still made. The state ranks high in goat's milk and beef production, and corn or wheat flour tortillas accompany meals. Among the dishes Larousse lists are caldillo duranguense, cabeza de res a la olla, asado de bodas, arracheras, cabrito al horno and caldillo de machaca, many of them shared with neighboring states.
Chile pasado is a defining ingredient. POSTA México describes it as green chile, ancho or poblano, roasted, peeled and hung to dry in the sun, and lists it in dishes such as caldillo, pork with chile pasado and gorditas de chicharrón. Caldillo duranguense, a beef stew with chile, tomato and potato, has been the state's emblem since the nineteenth century and was originally made with venison.
Tacos and gorditas
Durango's taco traditions are less documented than those of its neighbors. Food & Pleasure describes carne asada as a weekend ritual in family patios, with beef cooked over charcoal and served with freshly made flour tortillas, homemade salsas, frijoles charros and guacamole, and it mentions northern gorditas filled with guisados. POSTA México names tacos de tripa among the city's street foods. Larousse lists gorditas as part of the lonche, the midday snack.
The Comarca Lagunera, which spans Durango's Gómez Palacio and Lerdo and Coahuila's Torreón, is the home of discada, a mix of beef, pork, chorizo and bacon cooked on a plow disc and eaten in tortillas. Tus Buenas Noticias reports that both states claim it.
Recognition
In 2022 Mexico News Daily reported a push to have Durango's cuisine formally recognized as cultural heritage, which the regional restaurant chamber described as a first step toward possible UNESCO recognition. The supporting dossier, compiled by historian Javier Guerrero Romero, covered dishes such as gorditas, caldillo, venorio, gallina borracha and carne seca.
