Tacos in San Luis Potosí
In San Luis Potosí the signature taco is the taco rojo, or taco potosino, a tortilla dyed with red chile, filled with cheese and served under potatoes, carrots, lettuce and cream, a close cousin of the state's famous enchiladas potosinas.
Tacos rojos
The tacos rojos of San Luis Potosí, also called tacos potosinos, are corn tortillas soaked in or colored with a sauce of red chiles, filled mainly with cheese and folded. They are buried under a garnish of diced potato and carrot, shredded lettuce, cream, crumbled cheese and salsa, and some vendors add pickled pork rind or a piece of chicken. Regional press describes them as a classic of evenings in the state capital, where they are sold at night stands and family restaurants.
The taco rojo belongs to the same family as the enchilada potosina, the state's most famous antojito, in which the chile is worked directly into the masa so the tortilla itself turns red; the enchilada is filled with cheese, cooked on the comal and sometimes fried. Plano Informativo associates the enchilada with Soledad de Graciano Sánchez, next to the capital, and attributes it to a cook named Cristina Jalomo in the early twentieth century.
Tacos potosinos in Texas
The name has traveled north. Texas Monthly has described a Texas Panhandle version, sold as tacos potosinos, made from crisp fried shells filled with shredded beef and melted white cheese and garnished with tomato, lettuce, queso fresco and avocado. The magazine noted that red chile sauce, the defining element at home, was there an optional add-on.
Other regional specialties
The state spans arid highlands and the tropical Huasteca Potosina, and its antojitos reflect both. In the Huasteca, bocoles, small thick corn cakes cooked on the comal and often split and filled, and zacahuil, a giant tamal cooked in an earth oven and sold by the portion, are better known than tacos. In the highland towns of Salinas and Real de Catorce, escamoles cooked with garlic, chile and epazote are served in fresh tortillas.
